Blatchford Kitchen

The Blatchford Field Air Hangar at Fort Edmonton Park is now home to a state-of-the-art commercial catering kitchen. Although the Blatchford Air Hangar had an existing kitchen, it was far too small to serve in its new role as primary kitchen for public and private events in the Park. The goal was to create a 4,263 sq ft state-of-the-art catering kitchen with a capacity to serve up to 5,000 people. Carlson completely demolished the existing facility, and then retrofitted the base building. The design was to be aesthetically consistent with the rest of the park and contribute to the Park’s historical feel. The new kitchen is supported by the installation of a large exhaust system, three makeup air units, and an air handling unit, along with ducting. New electrical schemes were integrated with the extant systems. Roof work was also involved, and included tie-ins to an existing EPDM/SBR membrane and wrap. The plumbing system was extensively reworked, and gas appliances, coolers, freezers, cookers, and cabinets were installed.
